Gavin Brooking

I am the hospitality professional behind GB Executive with more than 35 years’ experience as a manager and director in the top flight of the industry.

I was born into the hospitality business as my family owned and ran a three star hotel with restaurant and bar in the resort town of Torquay in the United Kingdom. I began working there from the age of twelve and after graduating from the University of West London with a BA Hons in Hospitality Management I commenced a diverse career that has taken me to multiple territories around the globe and has given me a deep insight into all aspects of the hospitality industry. During my working life, in executive and non-executive directorship roles, I have been lucky to learn from some of the industry’s legends including Mr Willie Bauer OBE FIH MI the legendary developer RTT.

I have also had the opportunity to collaborate with a number of well-known chefs and have drawn on this experience during my journey to Michelin success at the Castello del Nero Hotel in Tuscany. This diversity and depth of experience – from asset control and real estate development to fine dining restaurants and operational management – has provided me with the skills and experience to create GB Executive – International Hospitality Consultants.

Eco Hotels UK / India Plc & Ltd

As NED of this carbon neutral hotel brand I became a passionate advocator of renewable and low impact technology. I commenced service for this organisation as Chief Hospitality Officer before taking an interim CEO position to prepare the IPO. This was accepted by the LSE Ordinary Listing.

With India being the first target market, Eco Hotels is focused on owning, developing and managing three star premium and economy brands. We believe that this carbon neutral, premium value hotel brand is the first of its kind.

Castello Del Nero Hotel and Spa

My position as Executive Vice President involved an overarching drive to improve all aspects of the estate’s operational efficiency and profitability, generating cash flow for restoration projects in the vicinity.

I was instrumental in enhancing the overall hospitality offering and particularly in driving an estate-to-table produce policy which contributed to the hotel restaurant’s acquisition of a Michelin star.

During my service here revenue was increased by over 12M€ which released sufficient cash flow for me to embark on a series of farmhouse restorations located on the grounds of the estate.

Ewaterways Ltd

This position leveraged my previous experience working with digital teams as well as my extensive contacts within the travel industry. Ewaterways is the largest online aggregator of smaller vessel cruises from around the globe and this web based platform enables cruise lines, travel agents and boat owners to promote their products to a worldwide audience.

International Resort Management Spain – MD/NED

This organisation is the holding company for Excel Hotels and Resorts. I have sat on the board as Chair since 2006.

8 Over 8 Developments Thailand and Singapore LTD – Developer for Thai Assets – NED

8 Over 8 is the holding and development company for Dream Phuket and Nikki Beach Club. I held the NED role in both the Thai and Singaporean companies.

Asset Management

During my career I have managed a large range of assets in a number of different territories. These assets include:

Castello Del Nero Hotel and Spa

This restored 12th century castle is located on its own 740 acre estate in Tuscany. The Castello De Nero Hotel and Spa is a luxury hotel layered with Renaissance frescoes and contemporary interior design by Paula Navone. The estate itself is fully working with wine and olive oil production as well as a market garden and farm which provides estate-to-table Tuscan produce to supply the hotel’s Michelin starred restaurant.

During my time here I led the agricultural department to fully bioorganic certification as well as doubling the number of hectares for grape and olive production increasing those yields by 65% and 40% respectively.

Another estate asset that I was responsible for managing is the vacation rental property San Filippo which offers luxury accommodation in an elegantly restored 15th century farmhouse. I also headed up the Residence Project – restoration of five 15th century farm houses with sales prices from 5M € – 12M. The second farmhouse was completed to first fix in June 2018.

Holiday Clubs, Tenerife

I held overall responsibility for five iconic holiday properties in the south of Tenerife in the Canary Islands – Palm Beach Club, Beverly Hills Club, Beverly Hills Heights, Hollywood Mirage and The Paramount. These properties comprised of more than 1,000 luxury, studio, one, two and three bedroom units. There were also a number of four bedroomed penthouses.

My responsibility also covered the F&B aspect including several bars, cafes and high end restaurants as well as supermarkets, gymnasiums, beauty salons and wellness spas. I also oversaw a maintenance fee department, full regional support office, accounts, digital marketing and IT departments.

Dorra Bay Tower, Dubai

I took the reins on opening and was responsible for its enduring success and reputation. The 22 story tower in located in the sought-after Dubai Marina and consists of one, two and three bed apartments, duplexes, garden apartments and penthouses. There are also a number of townhouses available with private terraces.

Dream Beach, Phuket

This development in Phuket, Thailand includes the five star Dream Beach Hotel and Spa and the vacation rental resort, Luna Villas.

The hotel comprises 172 guest rooms, suites and villas and is known for the quality of its F&B offerings and the range of top end facilities.

Nearby is the Luna Villas resort consisting of a number of ultra-luxurious, three bedroom, three bathroom villas with private pools and first rate facilities and amenities. I was also responsible for the popular Dream Beach Club, a luxury pool complex on Layan Beach.

Estate and Farm, Tuscany

During this tenure I doubled the hectares of productive land on the estate and was responsible for a range of business critical assets including tractors, livestock, food crops and wine/olive production machinery.

Sunseeker Fleet, Tenerife

Available for charter and vacation rental, these super cruisers were an iconic feature in Puerto Colon, Tenerife’s largest leisure marina. I oversaw all aspects of these vessels including mooring, maintenance and crew recruitment and retention.

Carparks, Various Locations

I conceived the initiative to monetise spare areas of space within the grounds of the resorts I managed by turning them into pay carparks. I headed up these projects overseeing building work, machinery purchase and staff recruitment.

Palm Beach Commercial, Tenerife

I managed this thriving commercial centre in the heart of Playa de las Americas and leased the units to a range of retail concerns including estate agents, cafes, supermarkets, sports shops, beauty salons, electrical goods shops and jewellers.

Quick Service Restaurants, Tenerife

In addition to the F&B outlets connected to the resorts, I was also responsible for two standalone QSRs located in the busy Oasis del Sur area of Los Cristianos. Rosie’s Cantina offered high quality Mexican cuisine in cantina themed surroundings and El Paso offered a poolside location and a range of steak house classics.

Commercial Real Estate

I am an experienced manager of commercial real estate and have been responsible for a number of assets including office complex at Castle Harbour in Tenerife as well as overseeing administration of Royal Palm and Port Royale resort communities in Tenerife.

Golf Course and Green Keeping

During my time in mainland Spain I served as General Manager at the El Bosque golf course in Valencia. Designed by Robert Trent Jones Snr, the course hosted many international championships including the El Bosque Open (Volvo Tour), the Mediterranean Open, the PGA Senior of the European PGA and the S.M. Cup. I was responsible for the green keeping department, course management, green fees, F&B, members, professionals and the golf school.

Development

I have been involved with a number of successful development projects from design and construction through to pre-opening, opening and ongoing management. These projects range from hotels and vacation properties to casinos, nightclubs and beach clubs located in multiple territories around the world. Some of the developments I have overseen include:

Castello Del Nero, Residence Project, Tuscany

In 2010 I was appointed Vice President of the Board at Castello de Nero in Tuscany with the task of improving operational results by positioning the property at the pinnacle of the Tuscan hospitality market. By achieving this goal I was able to increase cash flow which enabled me to commence The Residences project.

This project involved a high end restoration of five fifteenth century farmhouses located on the CDN estate grounds. The first farm house, San Rafael, was restored as a family office and completed in 2012 whilst San Luigi was completed to first fix level by 2018. The properties are valued with individual sales prices between 5M€ – 12M€.

Celebration Jamaica

Celebration Jamaica is a world class hotel and entertainment resort in Montego Bay, Jamaica. I was instrumental in developing the various phases of the resort including more than 1,000 rooms across three hotels, various bars, restaurants and nightclubs. During my tenure here we achieved the first licence for a casino by working closely with the tourism minister His Excellency Edmund Bartlett. This master plan was sold to a leading international hotel chain.

The venue is located on 90 acres in the Rose Hall area with 3,000 hotel rooms within a five minute drive and more than 10,000 hotel accommodations within 30 minutes. Themed attractions entertain shoppers, hotel guests, conference attendees and Casino customers.

Dream Beach, Phuket

As principle director at this project, which was formally known as Nikki Beach, I was tasked with taking the project from initial design, through concept development to opening. I worked in close collaboration with the award winning architects Original Vision of Hong Kong. The budget for the development of this hotel was $35millon.

The project consists of the 172 room luxury Dream Hotel and SPA which includes a number of award winning F&B outlets as well as the nearby Luna Villas complex and the Dream Beach Club. This assignment also involved setting up of JV partners regional office.

Food and Gastronomy

Food is storytelling and the best storytellers captivate the imagination and satisfy a desire for adventure. Food and food culture is of fundamental importance to the hospitality industry. An organisation’s reputation can live or die on the quality of its F&B offering. Similarly, the company workforce needs to be engaged and energised by the standards of the food it produces.

My upbringing in a hotel meant that I was immersed in the culture of food preparation and service from an early age. This deep involvement let to food becoming both a professional and personal passion.

My global career has been a culinary adventure that has given me an intimate understanding of cultures, philosophies and ingredients behind a number of the gastronomic world’s most popular cuisines.

During my time in Italy I was able to realise my dream of using the organic estate to provide farm/garden-to-table Tuscan cuisine at Michelin star standard. I also have strong affiliations with the Sicilian kitchen where the delight of turning the most basic of ingredients into hearty meals has influenced me greatly. Of course the cooking of Spain is close to my heart and the years spent in that country have given me a strong appreciation of the regional and seasonal dishes that give the nation’s cuisine such a respected identity.

Thai food too has really grabbed my attention and during my time in the country I made a firm effort to learn the flavours and ingredients that give this cuisine such a distinctive and popular reputation.

Whatever the territory I understand the fundamental importance of food and food culture in business. I have a wide network of chefs and food industry professionals who I work with on a regular basis to help organisations improve their F&B offering. I am also lucky to have collaborated with several well-known international chefs on a number of successful projects.
